Perfectly Potatoes

Oh my goodness. It is a potato! I love potatoes. I will eat them mashed, fried, chopped, whole or baked.  Why? Why not! They are delicious.

I try not to think of the great potato famine, because I cry. Did you know millions of potatoes perished? They couldn’t be eaten.  No mashed potatoes, baked potatoes, chips, hash browns, potato salad, potato pie, Sheppard pie, fries, potato cakes, au gratin potatoes, potato sandwiches, potato rings, potato soup, potato dip, hot potatoes, twice baked potatoes, twice mashed potatoes, pizza potatoes, potato whisky, the list goes on and on.

Potatoes are amazing and good for you, only 110 calories, no fat, no sodium, vitamin C, potassium, vitamin B, fiber, and magnesium. I love potatoes. I could eat one on a stick like corn on the cob.

When I am sick I want something made from a potato. The potato whether it is warm, plain or whipped into an amazing recipe, feeds not only me, but my soul. The potato relaxes me. I feel better. I feel at peace. I can rest and recover.

My love of potatoes expands to my Mr. Potato Head. He is adorable and cute. I have him sitting in my room. Just looking at him relaxes me, I would love a real potato in my room to look at, but I would probably eat it. So I have Mr. Potato Head. He is too cute to eat, plus he is plastic which can’t be good for digestion.

So please for the love of potatoes everywhere, go look up potato recipes and make a potato dish tonight. Your friends, family and especially you will love you for it!
